Do Titanium Cutting Boards Dull Knives? Check First

Yes. Titanium cutting boards dull knives relative to end-grain hard maple, even when the sheet is softer in bulk than the blade. ASM's MatWeb data sheet for unalloyed Grade 2 titanium lists Vickers hardness of 145 and Rockwell B of 80. A Wüsthof forged Classic chef's knife is specified at 58 HRC on a 2015 Williams-Sonoma cutlery chart; ASTM E140 Table 1 converts 58 HRC to 653 Vickers. The gap looks knife-friendly on paper. The kitchen result is poorer because consumer boards are 1.5 to 2.5 mm of unyielding metal. Wood fiber parts. That sheet does not. The apex rolls. The easiest check before committing is the listing's titanium grade and thickness in millimeters, not the dishwasher claim.

Private-label ready meals are packed so the side still looks saleable on day four. A titanium board is the reverse packing error: the surface looks saleable forever, and the knife is the item that collapses.

What is the easiest check before buying a titanium cutting board?

The easiest check before committing is a 30-second read of two numbers on the product page. If either is missing, the listing is selling dishwasher survival, not edge preservation.

  1. Find the titanium grade. ASTM B265 is the sheet-and-plate specification. Grade 1 and Grade 2 are commercially pure. Grade 5 is the alloy Ti-6Al-4V. Surface22's product record names Grade 1 at 2 mm. Baoji Yunch lists Grade 1 and Grade 2 under ASTM B265, with 1.5 to 2.0 mm as the common home blank. Siraat's V2 page says "100% pure titanium" and, on the same page, "~36 HRC." Those claims do not describe one metal. Annealed Grade 5 sits near 30 to 36 HRC on mill tables; Grade 2 is measured on the B scale, typically 80 HRB on ASM's MatWeb sheet.
  1. Read the thickness in millimeters. Keith's Ti8722 spec gives 2.5 mm. Siraat's V2 spec gives 1.5 mm. Surface22 gives 2 mm. Yunch's factory note gives a 1 to 3 mm range for blanks. John Boos's NSF maple CCB chopping block is 2-1/4 inches, or 57 mm of wood. A 1.5 mm sheet cannot offer the same local give.
  1. Put those figures next to the knife's published HRC and edge angle. Wüsthof's 2015 Williams-Sonoma chart lists 28 degrees total (14 degrees per side) on forged lines at 58 HRC, and 56 HRC on stamped Pro and Gourmet. An older Wüsthof English catalogue still on retailer servers says the blade is "tempered to the optimum 56° Rockwell." The house does not publish one number. Report both, then compare.

How hard is a titanium cutting board compared with a chef's knife?

Board surface hardness and blade steel hardness are not published on the same scale.

ASM's MatWeb sheet for Titanium Grade 2 (UNS R50400) lists Vickers 145, Rockwell B 80, Knoop 170, and tensile strength 344 MPa. Grade 2 is too soft for a useful Rockwell C reading, which is why mill sheets use HRB. HonTitan's grade table lists Grade 1 at about 122 HV and 70 HRB, and annealed Grade 5 (Ti-6Al-4V) at about 335 HV and 30 to 34 HRC.

Kitchen knives live on Rockwell C. The Williams-Sonoma Wüsthof chart puts forged Classic steel at 58 HRC and stamped lines at 56 HRC. Victorinox SWIBO, the test knife in Vadim Kraichuk's chopping-board study, is X50CrMoV15 at HRC 56 to 58. ASTM E140 Table 1, for non-austenitic steels, converts 58 HRC to 653 HV and 56 HRC to 613 HV. Grade 5 at 36 HRC converts, on that same steel table, to about 354 HV. ASTM E140's scope says the conversion is empirical and material-specific. The direction of the gap is not in doubt: bulk titanium sheet is softer than a heat-treated chef's blade.

Knife edge angle decides how much of that hardness sits at the apex. Wüsthof's PEtec note on the 2015 chart sets European-style edges at 28 degrees included (14 per side) and Asian-style Santoku, Nakiri, and Chai Dao edges at 20 degrees included (10 per side). Clark Stone, presenting Wüsthof 101 for The Cook's Warehouse, said the company tested that 14-degree bevel at about 58 Rockwell and got more cutting while keeping the edge easy to refresh. Kraichuk's SWIBO knives were 16 degrees per side. A thinner apex needs less side load to roll.

Listings rarely print the second hardness: the native oxide. The Minerals Education Coalition lists rutile (TiO2) at Mohs 6.0 to 6.5. MatWeb's rutile sheet lists Mohs 6.2. The film is nanometers thick on mill-finished metal, not a ceramic glaze, and not a 58 HRC equivalent. It is still harder than bulk Grade 2.

Surface roughness decides whether that film acts like a file. HonTitan's 2026 finishing guide gives mill finish at 1.6 to 3.2 μm Ra, bead-blasted at 0.8 to 1.6 μm Ra, and brushed at 0.4 to 0.8 μm Ra. Chalco's Grade 2 marine-plate note claims Ra ≤ 0.4 μm on some HR/CR finishes. Those mill figures disagree by a factor of four. Yunch's kitchen process list includes pickling, polish, and optional sandblasting. Ask which finish shipped.

Why would a softer metal still dull a harder knife?

Bulk hardness is the wrong test for a 1-micron apex. Larrin Thomas, a steel metallurgist with a Ph.D. in Metallurgical and Materials Engineering from the Colorado School of Mines and author of Knife Engineering, put the mechanism on Knife Steel Nerds in August 2018: "If the stress applied to the edge exceeds the yield stress of the material, then the edge will be permanently deformed, or rolled." Hardness is a proxy for that yield stress. Geometry is the multiplier. A 14-degree-per-side edge on 58 HRC steel is strong in the steel and weak as a triangle. Press it into a surface that will not move, and the triangle bends.

Vadim Kraichuk, who runs Knife Grinders in Australia and published Effect of Chopping Board Material on Edge Longevity, stated the kitchen version: "Knives dull by two mechanisms: abrasion and edge rolling." His stand held the knife perpendicular under a 2 kg load, so abrasion was what he measured. A scrape, a heel parked on the board, a rock of the wrist: those are rolling loads. A 1.5 mm titanium sheet does not open around the edge the way end-grain maple does. The load stays in the steel.

The board does not need to be harder than the knife to roll it. It only needs to refuse to yield while a side load exceeds what the apex can take elastically. A 58 HRC blade is stronger than Grade 2 sheet.

Glass is the extreme of that refusal. Kraichuk's tempered-glass board took a factory SWIBO from 175 BESS to 290 BESS by 2,000 cuts, with the jump already visible at 600 cuts (235 BESS). On his scale, 50 BESS is a disposable razor and a score over 500 is a dull knife. Titanium is not glass. Grade 2 will take a scratch from a 58 HRC edge. The scratch is the board yielding in a thin line. The rest of the sheet still does not behave like wood.

Manufacturer copy often stops at the HV-versus-HRC comparison. Wisdom Titanium's explainer cites pure titanium near 160 to 200 HV against stainless knives at 500 to 800 HV, and concludes the board yields. Siraat's V2 page says titanium at about 36 HRC "protects the edge instead of dulling it like glass or stone boards." Both statements can be true about bulk hardness and still miss rolling.

How many cuts until a kitchen knife is no longer sharp?

Two published thresholds exist. Neither is a titanium-board test.

ISO 8442-5:2004 is the sharpness and edge-retention specification for food knives. CATRA (Cutlery and Allied Trades Research Association) in Sheffield designed the machine. The CATRA brochure states that the test media are loaded with 5% silica. For Type A edges (ordinary kitchen knives) Table 1 sets 60 cutting cycles, 50 N load, 40 mm stroke, 50 mm/s. Table 2 sets the pass marks: minimum initial cutting performance (ICP) 50 mm, minimum total card cut (TCC) 150 mm. Those 60 cycles are the cut count to a sharpness threshold for the knife as a product, on silica paper, not on a board.

Kraichuk's board protocol is the other number. He measured BESS after every 200 slices out to 2,000 cuts, under 2,000 grams, on new Victorinox SWIBO knives at 16 degrees per side. Acacia long-grain went 125 to 115 BESS; end-grain went 130 to 110. Both stayed kitchen-sharp. High-density polypropylene went 120 to 70. Tempered glass went 175 to 290. Bamboo end-grain went 165 to 210, so species matters. He found no significant acacia difference between end-grain and long-grain, which contradicts the usual "end-grain is gentler" claim for that wood. Report both: the fiber-parting theory, and his 2,000-cut acacia table.

No independent BESS series under that 2 kg, 2,000-cut protocol was found for a titanium board. Listings that claim "knife-friendly" have not published that curve. The glass row is the unyielding-surface bound. The acacia row is the wood bound. The titanium row is a gap.

BESS, the Brubacher Edge Sharpness Scale named for Mike Brubacher of Edge-On-Up, reports grams of force to cut calibrated media. Lower is sharper. Kraichuk's chart puts 50 as a safety-razor edge, 100 to 300 as a sharp knife, and over 500 as dull. A cook without a tester can still run a paper slice after a short trial inside a return window. If the sheet tears, the apex has already moved.

How does end-grain maple compare with titanium for knife edges?

End-grain hard maple is the surface sold as the knife-preserving alternative.

The Wood Database lists hard maple (Acer saccharum) at 1,450 lbf Janka, 6,450 N. Kraichuk's acacia boards sat near 5,000 N. The U.S. Food Code, quoted in the USDA FSIS Sanitation Performance Standards Compliance Guide at 4-101.19, allows "hard maple or an equivalently hard, close-grained wood" for cutting boards. NSF/ANSI 2 includes performance language for wood cutting boards. John Boos sells an NSF maple CCB chopping block at 2-1/4 inches, end grain, and an NSF maple R-Board at 1-1/2 inches.

Titanium's advertised durability is real on stains, odors, and warp. It is the wrong durability for an edge.

Titanium cutting board pros and cons split cleanly. Listings are right about juice, warp, and the dishwasher. The metallurgy and the missing BESS curve are right about titanium board knife edge rolling: a thin sheet that rings instead of giving.

On the numbers that exist, the best cutting board that does not dull knives is still wood or dense plastic the edge can enter. Kraichuk's high-density polypropylene improved BESS from 120 to 70 by what he called an edge-refining, burnishing effect. End-grain maple remains the usual answer because it is thick, close-grained, and named in the Food Code. Titanium is a serving tray that happens to take a knife.

Is a titanium cutting board dishwasher safe?

Yes, as uncoated metal. USDA FSIS tells consumers that nonporous acrylic, plastic, or glass boards and solid wood boards can go in a dishwasher, and that laminated wood may crack and split. Titanium is nonporous metal. Siraat's care line says to rinse or run the dishwasher. There is no wood glue line to fail.

That answer does not repair the edge. Dishwasher survival is the shelf-life claim. The knife is the eating quality. FSIS also tells consumers to wash boards in hot soapy water, then sanitize with 1 tablespoon of unscented liquid chlorine bleach per gallon of water and rinse. The bleach step is about bacteria, not Rockwell.

Wood's dishwasher permission on the FSIS page and Boos's hand-wash instruction disagree in practice. FSIS is talking about solid, uncracked wood. Boos is talking about oil finish and glue. A cook who wants both a dishwasher cycle and a living edge keeps two boards: HDPE or polypropylene for raw protein, maple for the knives that cost real money. Titanium can be the protein board if the cook accepts more honing. It is a poor only board for a 14-degree, 58 HRC chef's knife.
